Easy Homemade Noodles with 3 Ingredients

Can you believe how much our lives have changed in 1 week because of the Coronavirus? We have gone from going to work everyday, plenty of food on the shelves and “normal” concerns to social distancing, quarantining and borderline hysteria.

Plus Kenny Rogers just passed away folks. Let’s all let that sink in for a moment.

We are now looking for ways to beat boredom and become more self sufficient. I thought making some homemade noodles on this quiet Saturday would be a great distraction. Boy, was I right! Not only did this keep me busy for an hour or so, but the final product is something made with love that we couldn’t wait to put in our bellies. Carbs schmarbs, right?

This is a great recipe to do with the kids, if you’re a pasta maker novice or you just want to try something new. Either way, put on this playlist, pour a glass of happiness and shut off the news for a bit. This easy homemade noodle recipe requires only 3 ingredients and you will be rewarded with a delicious beginning to a yummy meal in no time!

Mix

Mix your flour and salt together and dump on a clean surface. Make a crater leaving the sides thick enough to support the eggs. Crack the eggs into the crater and mix with your hands. You can beat the eggs in a bowl and then drop into the crater, but I like to get my hands in there and break the yolks with my fingers.

Knead & Roll

Knead the dough for a few minutes and you will end up with a fun ball that looks like this.

Begin rolling, and rolling, and rolling. Because I’m using a small roller that my Grandpa made years ago it did take me a bit longer. But, hey, I’ve got the time! Keep rolling until the dough is 1/4″ thick.

Gently fold up the bottom and dust with flour as you make each fold. This will keep the dough from sticking to itself.

Once you have it rolled up, use your knife to cut into strips. Keep in mind that this will determine the width of your noodles. I have made fettuccine sized noodles here.

Once the noodles are cut, unroll them and lightly and gently twist them into nests. Let these sit on a towel for about 1 hour, turn and let sit a couple more hours until dried.

Tip

Whatever shape your noodles dry will be how you store them. If you drape them over a dowel you will need something long to place them in (such as a newspaper bag). I think these nests will work just fine!

If you choose to cook them right away, drop them into salted boiling water and they will be ready in a minute or so. Keep an eye on them during this method as they will cook quick!

If you are cooking dried noodles, just boil them as you would any other.

How to enjoy

Some garlic butter with Parmesan sprinkled on top of these nests would be delicious! Or, maybe some sun dried tomatoes with bacon pieces? How about some chicken and Alfredo sauce? The options are truly endless.

Homemade Noodles

This is a fun and easy way to make homemade noodles. Nothing artificial here, just 3 wholesome ingredients!

Ingredients

  • 2 cups Flour
  • 4 Eggs
  • 1 tsp Salt
  • 1/2 cup Flour, keep on hand to us if needed

Instructions

  • Mix 2 cups flour and salt together in a bowl. Dump onto clean surface. Using your hands, make a crater large enough to hold the eggs making sure the walls are thick.
  • Crack open the eggs and drop them into the crater of the flour mix. Mix with your hands and knead until completely combined. If your mix is too wet and not creating a dough like consistency, add some of the 1/2 cup flour a little at a time.
  • Roll out on a lightly floured surface into a rectangle until dough is 1/4" thick. Begin folding up an inch or two starting on the short end. Dust each fold lightly with flour.
  • Cut dough into slices. keep in mind how thick or thin you want your noodles to be.
  • Unroll these slices and loop into loose nests or hang to dry. Dry for a few hours and store in plastic bag or container. These can be refrigerated for up to a week.
  • If cooking before/without drying, noodles will cook in boiling water within a minute or so. Cook dried noodles as you normally would.

These will keep in the refrigerator for a week.Â
